Cheese Stuffed Biscuits

Cheese Stuffed Biscuits. Stumbled upon this recipe on a lazy Saturday morning, on an “America’s Test Kitchen” episode on television. Oh so gooey … try to keep it to 1 per serving :-).

I had never been one to eat biscuits, until stumbling upon one of these cooking shows that walks through “how-to’s”.  During this episode they had run through a tutorial for making this recipe, and with embarking on my recent baking adventures, this was one I decided to try making.

Ingredients

  • 2.5 cups all purpose Flour
  • 2.5 teaspoon Baking powder
  • 1 teaspoon Salt
  • 1 tablespoon Sugar
  • 1 cup Butter – (cold) tiny cubed/minced
  • 1 1/2 cup Milk – whole, half, or buttermilk
  • 1 cup of shredded cheddar cheese 
  • 1 tablespoon melted butter for wash
  • 1 tablespoon olive oil for lining Cake pan

Directions

  1. Roll up cheese into small inch sized balls, and set aside – use fresh cheese which does not have a coating that’ll prevent it from melting properly
  2. Cut Butter into half-inch cubes, and put in freezer for 10 minutes
  3. Preheat oven 500F – Note: you will drop oven temperature to 450F after 5 minutes of baking
  4. Roll up Chedder into small balls (optional)
  5. Mix all dry ingredients together – Flour, Baking Powder, Sugar, and Salt
  6. Combine Butter cubes with dry mix without breaking cubes – use fingers to mix in
  7. Combine Milk with Flour and Butter textured mix, breaking cubes – use spatula
  8. Line Baking tray with a generous amount of flour
  9. Scoop 1/2 cup of mix onto tray
  10. Roll up Biscuits into thick flat cakes, add cheese balls to center, and wrap it closed into round pastry ball
  11. Use melted butter as wash on all dough balls
  12. Lightly oil cake baking pan – Note: using Cake Pan, helps sustain the heat so the biscuits cook all the way through, including melting cheese
  13. Arrange dough balls in baking pan
  14. Bake for 5 minutes at 500F, Then reduce the temperature to 450F and bake for 15 minutes more, or until golden brown
  15. Let sit for 5 minutes before taking out of pan, allow to cool for 5 more minutes before serving – cheese will be hot
