Pasta with Ground Turkey and Spinach

Quick and easy pasta recipe, with 6 or 7 healthy ingredients.  Use a bowl, and have juiciness with each bite for as long as possible.  

I’m a fan of quick meals, while concocting protein, vegetables, and an anchor ingredient like pasta, rice, or gnocchi.  The basics of this recipe is garnered from my fried rice recipe (https://mycraftymeals.com/fried-rice-smoked-turkey/ ), but with a different set of ingredients and base.

With a handful of components to work with, this recipe is quick, and cannot easily be ruined even by a new cook.  Expect to spend only 30 minutes or so for the core cooking aspect, after ingredients are all laid out.

Ingredients

  • 1/2 pound thick pasta – penne or others (without a scale, use the weight on packaging for weight)
  • 1 pound ground turkey
  • 1 small red onion
  • 1 jalapeno
  • 2 – 3 cups fresh baby spinach leaves
  • 1/4 cup olive oil
  • 1 cup chicken broth – look for my recipes on Soups to see how to make simple flavorful broths

Directions

  1. Boil pasta as instructed on packaging – until al dente
  2. Strain pasta, adding cold water to cool it, and a teaspoon of olive oil to keep texture
  3. In a large skillet, on medium heat, add turkey and cook, stirring constantly for 10 – 15 minutes.
  4. Add cooked pasta, olive oil, and chicken broth
  5. Stir the combination together for about 5 minutes
  6. Add in the sliced onions and jalapeno
  7. Fry mix together until excessive fluid dries-up – be sure to leave some moisture in

1/2 Ib. thick pasta such as Penne, small bulb red onion, medium jalapeno, 3 cups baby spinach, 1Ib. minced turkey (or beef), 1 cup chicken broth (look for my recipe on how to cook and store for future use), 1/4 cup olive oil
